TIPS : Because the flour is basically cooked, after mixing the ingredients... Itak Gurgur can be directly eaten. The use of hot water in the recipe below is used when using roasted flour, but if using a steamed flour the hot water is not needed (because steamed flour is already moist, making it easier when mixing --- do when fresh out of the steamer and still in warm).

- 250 gr rice flour
- 1/4 coconut, grated and steamed briefly
- 100 gr brown sugar (to taste)
- 2 tbsp granulated sugar (adjust sweetness )
- 1/4 tsp vanilla powder
- 1/4 tsp salt
- Enough hot water
Steps to make Pep Cake (ITAK GURGUR)
- Mix the rice flour, coconut, sugar, vanilla powder and salt.
If using roasted rice flour: add hot water gradually (so that the dough comes together), stirring until blended.
- Add brown sugar into the dough, stir again evenly.

- Compact and shape the dough mix by clenching it in your fist firmly, so that the cake is formed and does not easily fall apart.

- Itak Gurgur is ready to be served along with tea or coffee.
