My version: these turned out looking like mini muffins, instead of a cake or a tart...! :-D To be transparent, this would NOT be the most authentic and traditional way to bake Runeberg cakes... But they turned out tasty, that's what matters :-)

Ingredients and spices that need to be Prepare to make Runeberg cake:

  1. 100 gr soft butter
  2. 1 dl sugar
  3. 1 egg
  4. 1.5 dl flour
  5. 0.5 dl almond flour
  6. 1 teaspoon baking flour
  7. 1-3 spoonfuls cardamom
  8. Splash cream / creme fraiche / milk
  9. To moisturize
  10. 0.5 dl water
  11. 2 spoonfuls sugar
  12. 3-4 spoonfuls liquor (e.g. cognac)
  13. Decoration
  14. Raspberry marmalade
  15. Powdered sugar

Steps to make Runeberg cake

  1. 1) Mix butter and sugar together. 2) Mix all dry ingredients separately together. 3) mix dairy products together. I ended up not having cream, so I pivoted and mixed a few spoonfuls of milk and creme fraiche together.
  2. Mix the dry ingredients and cream into the dough, alternating and mixing the whole time.
  3. Add the dough into little cups, I created mini muffins and used also one coffee cup to create a larger cake version. Tip: worth to make sure you can easily get the cakes out of the cups by adding a tiny bit of butter / flour into each cup before the dough.

    Bake in 175 C / 350 F for about 15-20 minutes. My mini muffins only needed 15 minutes.
  4. After baking, let them sit and cool down for 10 minutes. Add a spoonful of the moisture mix on top of each cake. Let the cakes sit in the refrigerator for a couple of hours (or even better over night).
  5. Decorate with powdered sugar and a marmalade. Please note: the original decoration calls for making a white, round icing on top of each cake. However, I opted in for a simpler version :-)

While that is in no way the end all be all guide to cooking fast and simple lunches it's very good food for thought. The stark reality is that will get your own creative juices flowing so you could prepare wonderful lunches for the own family without the need to perform too horribly much heavy cooking at the approach.
